- .5 lb Thai Chilies
- 1 bottle Medium Dry Sherry

Instructions
- Select a decanter with an adequately wide neck that will both accept the whole chilies and eventually disgorge them. Fill the decanter to the top with the whole, fresh chilies.
- Carefully pour in the sherry to the brim.
- Stopper the decanter and let stand in a cool, dark place from two weeks to a month before using, judiciously, in soups, stews, sauces, or even scrambled eggs!
Recipe Notes
Most Pilipili Ho Ho recipes call for either gin or vodka, with just a flavoring of sherry, but using all sherry is far less boozy and more flavorful. Warning: Use this condiment with care. It packs a very peppery punch, but in moderation it’s a superb, easy-to-use addition to many recipes.
