- .5 head Escarole
- .5 head Curly Endive
- 1 handful Baby Arugula
- 1 bunch Cress
- 1.5 Tbsp extra virgin olive oil
- .25 tsp Sea Salt

Instructions
- Rinse and dry all the greens.
- In a large mixing bowl combine the Escarole and Curly Endive, tearing it by hand.
- Add the baby Arugula.
- Snip and add the tender Upland Cress. Mix all greens before dressing.
- Drizzle greens with olive oil and sprinkle with sea salt.
- Toss gently but very thoroughly before serving.
