Sautéed carrots for Poulet Jardin
Instructions
  1. Scrub rather than peel the carrots and cut into julienne strips 3 to 4 inches long.
  2. Plunge the julienne carrots into a pot of boiling water and pre-cook for 3 to 4 minutes, just long enough to take away their raw edge.
  3. Drain the carrots, but don't refresh in cold water. Instead, pop them straight into a skillet with the butter. Saute over a medium heat for another 2 or 3 minutes, until the carrots are tender, but not soft or mushy.
  4. To finish, add a drizzle of honey and a generous grating of fresh nutmeg. Toss together and serve.
Recipe Notes

These carrots are not quite "glazed," but they do have a slightly sweet, buttery, nutty taste that are as good tasting as they are good for our health. After all, what self-respecting garden is without a row of Bugs Bunny's favorite vegetable?
