Grilled asparagus for Poulet Jardin
Instructions
  1. Rinse and dry the asparagus. Use the "snap test" to find the natural separation point of the woody root end from the more tender tip section. Snap one, then cut through all the rest at the same point, discarding the woody base end. Place in a chaffing dish, drizzle with olive oil and season with a scant pinch of salt and a couple grinds of black pepper. Toss to distribute seasonings and coat the asparagus spears with oil.
  2. Pre-heat either an outdoor barbecue or a stovetop grill plate to medium temperature. Brush the grates clean of any charred bits from the last time it was used. There is no need to oil the clean grates since the vegetables have been tossed with olive oil already.
  3. With the metal grill medium hot, spread out the asparagus for as much contact with the metal as possible. This is what creates the char marks, enhancing the flavor.
  4. Keep an eye on the spears as they cook. Being more fibrous, asparagus gives fewer clues than other vegetables that it's nearing doneness. Rotate the spears to char the sides evenly. You want them well "marked," but not blackened and shriveled. Check for doneness by trying the flex test. Grip an asparagus spear from the root end and hold it horizontally with your tongs. If it's no longer rigid, but starts to sag or flop, it's done.
  5. Finish with a squeeze of fresh lemon juice while still on the grill. Lemon and asparagus goes beautifully together.

Asparagus can be grilled ahead of time and presented at room temperature, or re-warmed, when it's time to assemble the Poulet Jardin platter.
