Antipasto recipe loaded with fiber as prepared by Food Over 50
Instructions
  1. Cut all vegetables into “grill-able” sizes, stack on a big platter, dress with olive oil and salt/ pepper for grilling.
  2. On a clean, oiled grill over medium low heat, lightly char vegetables in comparable groups, leaving lemons and artichokes for last.
  3. Arrange and display on a spacious platter to serve.
  4. Garnish with flavorful protein elements such as Parmesan cheese and anchovy fillets - optional.
