Ingredients
- 1 ea zucchini
- 1 ea Yellow Squash
- 1 ea fennel bulb
- 1 ea red bell pepper
- 1 ea Head of Radicchio
- 1 cup Artichoke Hearts
- 2 ea lemons
- 4 Tbsp olive oil
- 1 pinch salt
- freshly ground black pepper

Instructions
- Cut all vegetables into “grill-able” sizes, stack on a big platter, dress with olive oil and salt/ pepper for grilling.
- On a clean, oiled grill over medium low heat, lightly char vegetables in comparable groups, leaving lemons and artichokes for last.
- Arrange and display on a spacious platter to serve.
- Garnish with flavorful protein elements such as Parmesan cheese and anchovy fillets - optional.
