Fresh, bright every-so-slightly briny Parsley Sauce features three amazingly healthy ingredients - clean, tart lemon juice, heart-healthy extra-virgin olive oil and herbaceous, vitamin & antioxidant-rich parsley. It’s perfect on grilled or baked ﬁsh, and just as good on chicken!

- .5 ea lemon
- 4 Tbsp olive oil
- .5 cup flat leaf parsley (chopped)
- 1 tsp capers (chopped)
- 1 pinch freshly ground black pepper
- In a spacious mixing bowl, combine and emulsify the lemon juice and olive oil.
- Finely chop the fresh parsley and capers. Add both to the lemon/oil mix. Sprinkle with freshly ground black pepper. Combine thoroughly and serve over roasted or grilled chicken or ﬁsh for a bright, brisk, fresh ﬂavor enhancement.
This simple and extremely tasty, no-cook sauce contains only heart healthy olive oil instead of saturated animal fat, and just a hint of sodium from the chopped capers. The bite of lemon and pepper, plus the freshness of the parsley, eliminates the need to add any extra salt.
