- .5 ea lemon
- 4 Tbsp olive oil
- .5 cup flat leaf parsley (chopped)
- 1 tsp capers (chopped)
- 1 pinch freshly ground black pepper

Instructions
- In a spacious mixing bowl, combine and emulsify the lemon juice and olive oil.
- Finely chop the fresh parsley and capers. Add both to the lemon/oil mix. Sprinkle with freshly ground black pepper. Combine thoroughly and serve over roasted or grilled chicken or fish for a bright, brisk, fresh flavor enhancement.
Recipe Notes
This simple and extremely tasty, no-cook sauce contains only heart healthy olive oil instead of saturated animal fat, and just a hint of sodium from the chopped capers. The bite of lemon and pepper, plus the freshness of the parsley, eliminates the need to add any extra salt.
