Turkey Noodle Soup


​​​Every cuisine has its comfort foods and for many Asian countries a piping hot bowl of noodles in broth is it. Infused with garlic, ginger, chili, soy, sesame and flavorful low-sodium soup broth, these perfect bit-sized turkey balls are also low in saturated fat and quite filling, served atop a nest of noodles and bok choy.

Instructions
  1. To create the soup broth, combine the water, low-sodium soy sauce and rice wine vinegar in a sauce pan. Coarsely cut the red chili, crush the lemon grass and slice the ginger. Add to pan, along with several grinds of black pepper, and bring the seasoned liquid to a gentle simmer over medium-low heat.
  2. For the turkey meatballs, finely mince the garlic, ginger, red chili and green onion. In a spacious mixing bowl, combine the aromatics with the ground turkey, one egg white, low- sodium soy sauce, sesame oil and ground black pepper. Mix all ingredients thoroughly with your hands. Form into balls and poach in broth approx. 5 minutes until firm and fully cooked. Remove balls and reserve.
  3. Next, strain the soup broth, removing all the chunky ginger and lemon grass. Place the strained broth back on a medium high heat, add the pre-cooked Asian noodles of your choice and heat through. At the same time add the leaves of baby bok choy to wilt.
  4. To serve, remove bok choy from the pan. Place a portion of noodles in each serving bowl, pour in broth, place 3 or 4 turkey meatballs on top, arrange some of the wilted bok choy leaves along with radish slices and cilantro.

Reminiscent of an authentic Noodle Shop, this light but hearty, low fat, reduced sodium, highly aromatic dish is perfect for cold weather and a ‘healthy’ appetite.
