Ingredients
- 1.5 cups Lentils
- 4 cups water
- 1 Tbsp peanut oil
- 1 ea Small Onion
- 4 ea garlic cloves
- 2 ea Red Chilies
- 1 ea jalapeno
- 1 Tbsp Ginger (minced)
- 1 ea Large Carrot
- 1 bunch cilantro
- 1 tsp Cayenne
- 1 tsp coriander
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp Mustard Seed
- .5 tsp Cinnamon
- .5 tsp salt
- freshly ground black pepper

Instructions
- In a large, lidded saucepan, sauté diced onion, garlic, ginger, carrot and chilies in oil.
- Add the dry spices, stir and sauté another minute to ‘bloom’ the spice flavors.
- Inspect, rinse and drain lentils. Add to pot along with water. Stir, lower heat and partially cover. Cook approx. 50 minutes, stirring occasionally.
- When lentils are completely tender, stir in freshly chopped cilantro and serve.
