- 1 ib Skinless Salmon Fillet
- .25 cup olive oil
- 1 ea lemon
- freshly ground black pepper

Instructions
- Cut salmon fillet into 1” cubes
- Place 4 or 5 cubes on each skewer, piercing across the grain. Cover with plastic wrap and keep chilled prior to grilling.
- Combine olive oil, fresh lemon juice and black pepper in a small jar - Shake to combine.
- When ready to grill, shake up olive oil & lemon marinade, brush onto salmon skewers and place skewers on a clean, oiled grill grate over medium heat. Grill for a few minutes only, turning skewers regularly and brushing with remaining marinade. Salmon should be lightly grill- marked and firm, but still moist.
