Instructions
  1. Carefully inspect meat, removing any silver skin or excess fat. Season with cumin, garlic and black pepper. Place in large bowl and drizzle with olive oil.
  2. Slice onion, bell peppers, jalapeño and half the cilantro. Add to bowl with meat and squeeze in 2 or 3 of the limes. Toss all ingredients to marinate and let stand 15 minutes.
  3. Pre-heat grill to medium temp. Lightly oil the grill and lightly char scallions. Also soften tortillas on grill until pliable and slightly marked. Set scallions aside when done and store tortillas in a tortilla keeper or self-sealing plastic bag to remain moist and pliable.
  4. Grill beef and vegetables. If using too small a grill, or a barbecue with wide-set bars, just grill the meat. The veg may be quickly pan-fried at the same time. Slice the beef in thin, cross- grain strips when done.
  5. Fill warm tortillas with small portions of beef and vegetables. Add slices of avocado and finish with a squeeze of lime. Serve with grilled scallions and radishes.
